It may sound a little funny, but I promise it’s a favorite!! It is so simple and delicious, the best part is that you can make it taste however you please by adding your favorite toppings and ingredients!
What you’ll need:
- Coconut Milk (3oz per serving)
- Chia Seeds (1 tbsp per serving)
- Mason jar
- Your Favorite Toppings: honey, cinnamon, cacao nibs, fruit of choice, granola, the list is endless!!
- (You can double or triple the recipe to store multiple servings in the fridge- keeping fresh for up to 3 days)
How to Prepare: Mix the coconut milk and chia seeds in your mason jar(s), and then add your toppings (some people prefer to add their toppings before eating). Let it sit in the fridge for a few hours or overnight; grab it when you need an easy snack or a healthy treat, and enjoy!

These energy balls can be prepped out ahead of time for an easy grab & go snack!
What you’ll need:
- Rolled oats (1 cup)
- Peanut butter or almond butter (1/2 cup)
- Chia seeds (1/4 cup)
- Ground Flaxseed (2tbsp)
- Honey or Maple Syrup (or both!) (1/4 cup)
- Cacao nibs (1/4 cup)
- Vanilla extract (1tsp)
How to prepare: Combine all of your dry ingredients and mix, then add your wet ingredients and combine them all together. Roll into bite-sized balls and refrigerate until firm. Grab and go as a super simple but nutritious snack!
